Uses
Dried mushrooms are a great addition to stocks, soups, braises, and stews. Mushrooms can also be rehydrated by steeping in hot (but not quite boiling) water and used in stir fries or other dishes (more common in Asian cuisines). When rehydrating in this manner, the water can be added to a stock pot or used as a flavoring agent in the dish.
Substrates
- Shiitake and Lion’s Mane mushrooms are grown on hardwood with organic wheat bran.
- Oyster mushrooms are grown on a mix of hardwood and organic soy hulls
